If it’s for fiber, then begin harvesting when seeds already start to develop. Cut the stalks then leave in the field for five weeks. Then dry them in a cool, dry area until they have a moisture level of 15%. For the seeds, start harvesting when the crop is 16 weeks old. Reap the top of the hemp plant then threshes seeds into a tarp. Winnow seeds then store in a 32-40°F area.

If you’re familiar with the cultivation of tobacco, the process is the same, with minor differences.
Mature plants are cut or pulled by the roots and hung either on racks for this purpose or in barns. Once the plants have dried, they are then stripped/shucked (the flower and leaves removed from the stalks).
This was the method we used to harvest the flower to be sold. Then we separated the floral material from the leaves and trimmed it up and packaged it. I know many of the processors for oil and fiber want the plants in their entirety transported to them within a day or two of cutting/pulling. There may be other differences in the detail for hemp raised primarily for fiber or oil, but I can say that the above is the way we harvested ours.
